Butternut Tortellini

While the weather was cooling down, the KIND menu warmed up. And what better way to warm up than with a bowl of beautiful hand-made, plant-based pasta?

Tortellini is often referred to as “ombelico” – the Italian word for “belly button” – due to its somewhat navelly shape. It’s quite fitting then, in trying to create the perfect autumnal belly warmer, that we’ve filled our ombelico’s with golden butternut pumpkin… like little bellies filled with mushy golden sunshine! And to really accentuate the warmth, we’ve flecked the wee guys with green chilli and char-grilled bell peppers, then set them afloat in a hot bath of coconut broth.
